There are two potential explanations within canon.

1) Death is bound to the will of the bearer of the Crimson Stone, which Dracula uses to achieve immortality.

2) Dracula and Death are actually friends, and Death chooses to help him.

Dracula can never die due to the Curse of Man, and a lot of killing surrounds him. Since Death is portrayed as malicious rather than kind in universe, we can assume that either he's subservient to Drac because of his death immunity, or he likes to hang around because CV is a place of constant destruction.

They're buddies. There's even a game where they fuse into one being and you have to fight them as the final boss.

I mean, the Japanese title is Devil's House Dracula, and there's all sorts of demons and ghoulies in there. Why wouldn't Death be a part of that?
