btw had McDonalds new special burger. Bearnaise. It wasnt bad, nice balance of flavors, lovely tiny tiny fries in the burger, the good thicker patties. It was nice.

Forgot to take a pic but I cooked this tonight. Got a pic of the pickled chilies at least:

9/10 for the pork, 10/10 for the pickles, A1 meal all around for sure.

Tweaked the ingredients for the pickles just a little
-4 Thai chilies
-1.5 shallots (used one regular-sized one & one very small one)
-125ml rice wine vinegar
-Salt and sugar, to taste
-Fish sauce
-Fresh white pepper

Started by slicing the veggies & putting them in the bowl, sprinkled them with salt & sugar then waited just a bit to let them absorb some of the moisture, sprinkled the fish sauce & cracked the white pepper over the veggies & stirred them around a bit so they could further marinate, then finally added the vinegar, stirred again & let sit in the fridge overnight. Highly recommend as a side for countless dishes.

this is retracted btw, turned out I picked it too late and most of it was past its best before date, I ended up immediately throwing out probably 90% of it. with the rest I made this rather unappetizing looking goop that I thought was alright but the rest of my family hated lol

Made a messy looking burger but the flavors were on point. The sauce I made was pretty tasty. I used fresh brussel sprouts that I cut into tiny pieces, fried them in bacon fat and added that to the sauce which had chopped onion, hp sauce and mayo. The sprouts added a nice nutty flavor. Also had some extra fried brussel sprout crumbs on top of the cheese as well.

honestly in some ways it might be for the best, I served 4 people with probably a little under 10% of the total mushroom and none of them really want to eat it again so I have absolutely no idea what I would have done with the rest of it anyway

Massive burger I made with:
85% lean beef
Wild rice
Onion
Chopped mushrooms
Pepper
Garlic powder
Dried Parsley
Worcestershire sauce

For the patty, topped w/ ketchup, mayo, red onion, red leaf lettuce, tomato & white American cheese.

Side is fennel (first time making), turned out decent enough.

Tonight I am just doing my easy tacos. But I want to do something special on Saturday and I don' know what I can do. Not eating beef and pork really limits my cooking ideas. I really want freaking steak .

you mixed rice in with the beef? i've never tried that before. i use Italian style bread crumbs and an egg, and sometimes i use some onion and bellpepper put through the food processor, and mix that all up, and then right before i put the patties on to cook i crust them with salt and pepper and slather some A1 or some BBQ sauce on them.

The wild rice in question is actually a type of grass thats very ubiquitous in Minnesota Native American cuisine:

Adds a lot more texture than actual rice & its really nutrient rich, so it went off the fattiness of the beef really nicely. Also funny you mention eggs & bell peppers because I actually did use an egg to hold everything together & the recipe I was looking at called for green pepper as well (opted out only bc it was already pretty labor-intensive keeping everything compacted together.

Guess Ill bite the bullet & include the measurements while Im at it, lmao:
-1/2lb 85% lean ground beef
-1/2 cup cooked & chilled wild rice
-1/2 yellow onion, chopped
-8-10 petite mushrooms, washed & chopped
-1/2 tsp garlic powder
-1/2 tsp black pepper
-1/2 tsp dried parsley
-1 egg

Mix ingredients together in bowl with fork until halfway integrated, then use your hands to finish the job. Once fully blended, shape patties individually over plastic wrap then fold wrapping over them. Store wrapped patties in fridge for at least 1 hour before cooking. Yields 3-4 patties.

Pre smoked/cooked pork with potato gratin, buttered broccoli and cucumber.

Baked the pork with garlic butter, black pepper ,dried rosemary and grated Norwegian cheese (Jarlsberg).

Gratin was a premade one (they are pretty good but too much cream, I dont use it all), seasoned with black pepper, rosemary, few drops of white vine vinegar)

Broccoli boiled al dente with salt and dried rosemary, drained of water then melted some butter with them.

Very delish out of premade stuff.

ordered kebab plate, kebab with fries and some lettuce, tomato, red onion and few fefferoni peppers, with sauces, added some sriracha too.





Saved some of the meat for tomorrow, and could not finish the fries, I feel so fat right now.
