that eggplant lasagna looks good! i've never made an eggplant lasagna. i've made a regular meat lasagna, and also a chicken alfredo lasagna that was pretty good. is that jarred sauce or homemade? what is that you served with it, kale?

Was my first attempt at fresh marinara sauce & I assume you checked this topic before I edited to clarify it was kale, but yes to all of the above. As far as the recipes go

Extremely good! Bought $3 of eggplant from the Hmong farmers market - they dont have a business model where you can buy a package deal at a deduced price but the 4 count pack I bought was fresh enough

I've done this first 2 already, as well as zucchini fritters which I guess are kinda like fries. I might try the others though, thanks

the main problem is they get a little watery/bland as they get bigger, and they're really crazy oversized. most recipes I find online say a big zucchini is 450 grams and mine are like 1500

to mitigate the wateriness, after you shred or grate or slice up the zucc or whatever you're gonna do with it, put it in a fine mesh strainer, sprinkle generously with some sea salt, mix it around and leave it for like an hour, coming around every so often to mix it around more and press it down. the salt will draw some of the moisture out and drain through the strainer. wipe em off with some paper towels and they are good to go, with much less water content than they would have had otherwise.
the last thing I made, I actually did this then rolled them up in a towel and wrang the whole thing out <_<

I'm already familiar with most of these recipes / techniques, I guess. Not that I'm unthankful for the suggestions or anything but I might just have aready reached the limit of what can really be done with them in the first place

Friend bought a two-pack of these from Costco out of curiosity & let me take one of the packs - anyone have any experience with them? Thinking Ill slice one up thinly & cook it in a rice cooker w/ 1 cup of rice, 2 cups water (after already washing & draining the rice) & maybe 2-3 leafs of bok choy

Gonna do a lot more home cooking in the near future... after an already fairly mediocre/off-kilter restaurant experience last Friday, I had the worst service I've ever experienced at an Indian restaurant (or of any cuisine, for that matter)... not dining out again for a while

Call kidding aside, I have been super depressed for a while and I am trying to get back into cooking. This picture was from a while ago. Even if the chips are not s well as I like them. I was proud of this for the fish. It came out just right.

Just found out that there are stores that only sell stuff to reataurants and other stores are now opening up for anyone who pays a yearly fee (the closest one for me is 3 months free then $30 a year).

There I could find ingredients and big packages of stuff I cant find in normal stores.

Im so tempted to try.
