The difficulty curves is the same as other games start easy and end hard, but the enemies doesn't get stronger, you get weaker. You got tons of skills early and able to mow down enemies easily, giant bosses are like regular big types of enemies, but the char lost powers as you progress. Enemies you used to one shot becomes actual threat. You lost skills and abilities, but the game is designed like immersive sim where you have to use the environments to make creative kills.

The environment stuff exist since the beginning and it is designee to be obvious looking at first, but due to how strong you are, you can just slice everything easily. As you lost powers, you started have to use these creative kills or stealth to get ahead.

Gears of War (because of just how strong the enemies get, and you get put into situations where you need to use the environment) & Metroid Prime (in the beginning when you lose your stuff) kinda do this to you

You don't get weaker per se but your spells have limited uses that never recover.

In Final Fantasy IV You have Tellah who starts out very strong but as you level him he gets weaker and weaker. His stats will potentially go down as he levels up. He does gain stronger magic spells as the game goes on to counter this but he doesnt have enough MP to make any real use of the stronger spells. By the end of his time in you party he is almost a liability.

Story wise I enjoyed the idea of it but it can be frustrating as you play it.

Having lots of abilities in the start but then losing them would be bad design. It would both overwhelm new players and annoy people who learned to use them. I'd rather have the character have the same base abilities all game, with the player required to master their usage as the game gets harder and harder. It's better to add complexity to the game, not remove it.

Though at that point, there's no true difference between "player gets weaker" and "enemies gets stronger" if you're only reducing the players stats behind the scenes. Maybe you could make that work with a related story, like weakening because of illness.

It would have to be delivered in a really cool narrative way to not fall apart, like the character has a terminal illness or some shit and has to cope with death while getting weaker

I'd contemplated this sort of thing before and thought it would work well if you start without many abilties, gain more and more dduring the first half of the game, and then lose them gradually in the second half. especially cool if you lose them in a different order thna you gained them so you have different combinations of abilities going each direction
