Give me a bean, potato, and bacon taco for breakfast all day. We've always got a homemade batch of beans to refry in lard and cook the potatoes in the bacon fat. We would do homemade tortillas too but HEB's are so cheap, good, and close by we just get those.

I did have a ridiculous brunch this weekend though. We sat out on the porch while it rained and threw down on some sourdough pancakes with homemade candied pecans and whipped cream, and I slipped on a ridiculously tasty Irish coffee.

No lie i love basic breakfast sandwiches like that. I'll actually use shitty American cheese since it melts so we'll between the egg and sausage.
