what would you eat?

Both my mom and sister have celiac and a blood test looked like it confirmed that I did too, however I haven't really ever experienced any symptoms.
I've been eating a gluten free diet for a year and my new GI has said he thinks my blood test wasn't conclusive enough, so he scheduled an endoscopy for me in early May.
In order for the procedure to show whether or not I truly have celiac I have to eat gluten for two weeks prior to the endoscopy.
It will either confirm that I have to go back to eating gluten free for the rest of my life, or I'll just be able to eat whatever the fuck I want again.

Question is:
If you knew there was a possibility you couldn't eat gluten again, what would you want to eat during that two week period as a few last hurrahs?

I probably should go gluten free for a bit. My mom cant have gluten without getting sick. Maybe its the cause of my migraines.

Lead.

As unhealthy as it potentially is, wheat makes up too much of my diet to cut it out completely without suffering a catestrophic shift in diet. The same tends to go for dairy, and to a lesser extent, corn (which is a shame, because all three of those allergies run in my family, and I am mildly lactose intolerant already, so I could see any one of those kicking in as I get older).

I just go around the corner for a $5 one. Haha. Much cheaper. Plus, I dont think we have many, if any, they have any gluten free pizzas. And if they do, its probably not cheap. Not here, anyway...

I have an idea of the cost of producing a delicious craft beer, from nano to macro levels, keg to can/bottle and I know only a Bells ran local taproom/restaurant could afford $3 drafts.

I phrased this topic in a way that was super confusing.
Ive been on a gluten free diet for one year due to the result of a blood test that my PCP did showing I had celiacs disease (it runs in my family.)
My GI doesnt believe that test was conclusive enough so theyre going to have me eat gluten for two weeks prior to an endoscopy which will confirm 100% whether or not I have celiac.

Essentially Im going to eat gluten for two weeks not knowing if itll be the last time Im able to or not and Im gathering suggestions for the foods/drinks I should have since it could be the last time I do.

I could avoid gluten if I had to, but if I had a severe gluten alergy I'd probably be rather miserable... having to check every single product and such

Yeah thats been my last year, and it sucks too because my wife has to be conscious about it.

She says it doesnt bother her that much, but I know life would be easier if I didnt have to check fuckin everything.

Like, yeast is fine, but I have to watch out for yeast extract because that can sometimes contain gluten...

My wife's been GF for well over 15 years after her self-diagnosis (3 doctors pretty much told her the same thing that her results were inconclusive and/or it was something else).

I've made her lots of GF stuff over the years and we often go to PF Changs who do an amazing job with GF meals. There are GF beers but she prefers the Angry Orchard ciders and your local supermarket probably have tons of GF foods for sale.

What her gut doesn't get along with are Oats which are supposedly GF but a handful of celiac sufferers have a reaction to it

Her last major gluten attack was a few years ago.. her co-worker offered her a smoothie which she claimed was safe.. it shut her body down and she wasnt able to digest anything other than quinoa, okra and salmon for 6 months :(

Tl;dr : I'd be okay, I know the ropes of a GF diet

edit : watch out for GF products that have been processed on the same equipment and/or facility that processes wheat
