I never even realized it was a thing before I went to college and they had a little cauldron thing in the cafeteria that held warm maple syrup.

For most of the rest of my life, I've only ever seen or eaten it at room temp.

Usually only if it's being cooked into whatever I'm making (which does happen fairly often). If it's just going on pancakes or whatnot, I'll take it straight out of the fridge and pour it on.

I never tried hot maple syrup but it sounds interesting. I mostly have maple syrup either at room temperature from the pantry or cold from the refrigerator.
