I'm a big fan of the scenery in all three Xenoblade games. The first one is obviously held back a bit by the graphical limitations, but I feel the art design makes up for it and it's really just a joy to wander around and see everything. 2 is probably the weakest of the three in that regard, but it's still a gorgeous game.

Was gonna say Xenoblade. That game made the most out of the Wii's limited power.

Xenoblade 1, X, and 2 are all peak aesthetics IMO (with a few meh areas).

Ghost of tsushima for a more realistic look has frankly unfair beauty in some of it's scenery. They stand at the peak for me.

BotW

Took me a while to get past the first part of the game because I'd constantly start a fire, kneel and watch the sun go down

That game deserves a second playthrough

Journey deserves a mention here, of course. And there are lots of pretty 2D games, like Hollow Knight, Dead Cells, Blasphemous, etc.

I think the Soulsborne games from DS2 onward have had some really stunning scenery.

BotW
It has a dusty, washed-out shader over the whole thing that really drags the look of the game down, imo, but the game is very pretty if you can mod that shit out.
