So when it uses transform, does it become the shiny version of that pokemon or just the regular color?

It's still a Ditto, which is good for banging out a number of quests in PoGo, but worthless for gyms or battle league.

I'm still disappointed by even shuckle, slacking, and even snorlax for their piss poor tanking in PoGo.

I mean, to be fair, PoGo is still based on Ingress where defense is cute but useless,. But there is no scenario where even the tankiest gym in PoGo can't be taken out by a rando in 3 passes. Feeding berries in PoGo is even more useless than recharging in Ingress, and PoGo doesn't even have the Ada/jarvis mechanic to deal with.

It's a 1 in ~4.4 trillion chance by itself (32^6 * 4096) but there are other factors. Being a raid would probably guarantee a few of the IVs are perfect and shiny chance increases with a shiny charm.

So 5 star raid guarantees 4 IVs are maxed out and shiny charm triples the likelihood of a shiny appearing. So that reduces it to a ~1.4 million chance (32^2 * 1365.33). or ~4.2 million without shiny charm (32^2 * 4096) Still very unlikely but a much better chance than if it was just a wild encounter.
