Dark Souls is actually a good example of this. It has songs the fanbase greatly appreciates, but nothing truly iconic. The most memorable piece of audio from that series is the 'You Died' sound effect.
I mean I definitely feel like it's iconic

most gamers could probably hear like 5 seconds of that and immediately recognize the game

I remember my roommate (who isn't nearly as into VGM as B8 regulars) playing some Dark Souls 3 music and I was thinking to myself that some of these tracks were way better than they deserved to be

It turns out the songs I really liked were composed by Motoi Sakuraba of all people, and at the time I had no clue he had any involvement with these games

This is maybe true for western AAA games. I think it's a difference in goals. Those are going for a "cinematic" feel and have filmlike atmospheric soundtracks and licensed music. If you dip into indie games you can find game-y bangers and skilled composers on the same level as JP games.
what's weird is that bigger western studios used to be better about this? they would let their composers just go wild and set a tone. I think Ubisoft are a good example of this because it happened under their roof - two decades ago they hired Amon Tobin to do a Splinter Cell soundtrack and gave him free reign, meanwhile this gen they had Austin Wintory do an Assassin's Creed soundtrack and it was extremely muted and underwhelming. Bungie is another example. Martin O'Donnell created some of the most well-loved and notable soundtracks ever on the Halo games, then when he got around to working on Destiny it was limited as the music was composed by many other people and it was just your typical bombastic stuff.

There are obvious exceptions - Mick Gordon composed the hell out of the two new DOOM games, and set an aesthetic for Prey with "Everything Is Going To Be Okay" - but they are few and far between

Personally I always get it confused with Venice Rooftops, which is basically the same but faster and I probably prefer it (also was remixed when Ezio was in Soul Calibur)

Love both though and it's definitely an answer to this.

I definitely think this is true and mirrors my thought process itt before I started scrolling down. Like I literally thought of Uncharted immediately but was like "oh yeah, it has the main theme I guess" then did the same with like AC, Skyrim, Gears and a couple of others
