I don't know what you guys think canon is, but it's literally just used to determine what can be ignored when making a new canon work. It doesn't have anything to do with quality or what the fans want.

Pretty sure the majority determines what is canon, because it's belief that is important. You can even have multiple beliefs (religion is a good example).

Uh...no. Whoever owns the property gets to dictate what is official canon. Popular belief is completely irrelevant. You have multiple religion based on the same source material because people made multiple adaptations over a very long time. Christianity breaking into multiple sects is basically twilight fanfic becoming 50 shades.
