After Googling Avatar to know that was quite a ways back, I would say BoJack Horseman or Bob's Burgers, unless semantics dictate cartoons have to be primarily marketed toward kids.

Gravity Falls for sure but it was cut too short to really feel impactful. Steven Universe feels like a better candidate for that reason.

I love Gravity Falls, it's probably the most consistent of the excellent cartoons of the age. There are no bad episodes. Doesn't ever reach the highs of Steven Universe, but there are also a good few dud Steven Universe episodes, much more ups and downs.
