They go together well. Including it IN the sausage is excessive, because it's pretty easy to eat them together, so I wouldn't pay more for it, and when they do add it, it never seems to be enough cheese to really be relevant.

I watched the Bon Apptit video of Brad going to that sausage manufacturing place and they showing it with cheddar in it. I just don't see how that could be good.

It's good, but kind of an unnecessary novelty, given how easy it is to simply add cheese to a non-cheesy sausage. I feel similarly about stuffed burgers, especially where the stuffing tends to take up a relatively small part of the burger (since the burger won't stay together if there's too much stuffing).

This. Think the kind ive ate is called cheddarwurst or something like that.

Every year my buddy kills a deer and has part of it turned into summer sausage with cheese and jalapeo in it. Its fucking phenomenal.
