I'm not really a huge fan of cheese so it can go either way. I'd say I enjoy Cheese and Crackers but that's really it. Something with some good spice like Pepperjack..

The only dairy I actually enjoy is Ice Cream.

Usually 2 boxes of macaroni and a giant sauce pan of homemade cheese sauce (4 bricks of cheese minimum).

If i'm making smaller dishes it's 2 bricks per dish (I've done this where one was a white sharp cheddar and one was a pepperjack) in smaller 11x9ish pyrex dishes.

Who cares if its boring? I just want my food to taste good. And it does. Also, you can add other stuff to it. Like bacon. Some people also like thighs like onions. And maybe some people like tomatoes. I personally dont. But you can add a lot to it. Just Mac and cheese is the most basic form. Doesnt mean it doesnt taste good. And there are so many cheeses you can use to add to the taste. And mixing certain ones are pretty awesome.

I can't eat melted yellow cheese it makes me sick, but......I have a sneaky way of making mac and cheese that works.

I get a box of kraft mac and cheese. Imake about 2/3rd of the box (somewhere between 1/2 and 2/3rd).

I add a bit of butter after making the pasta, add my spices (garlic and pepper primarily).

Then I add a bunch of grated parmesian cheese. I stir/mix it up well, then I add half of the cheddar cheese from the box, mix it up so it's evenly distributed (it doesn't melt exactly, it just clings to the melted parmesian), then I add the other half of the cheese.

Net effect is warm pasta with a good yummy cheese consistancy, a bit spicey, but with no melted yellow cheese. It's pretty good actually.

Being from Wisconsin, the only time theres too much cheese is when you have so much that it wont fit on the plate anymore. There dont even have to be other ingredients.

Uhhh... the cheese sauce is usually about 5-6 cups maybe? Give or take
I'm estimating, because unless I'm baking, I don't really measure.

Macaroni is harder to estimate because cooked macaroni yields less in a cup than uncooked. But two boxes of said macaroni or 1 box elbow does the trick. I like macaroni with ridges so the cheese gets caught in the ridges

Always a good trio to base your Mac-n-Cheese with. As for a limit, the limit is limited only by your imagination and skill. For example, mozzarella is a favorite of mine, but it does not mix well. Add some parmesan to shredded mozzarella and top it over your half-finished MnC then toss the whole thing onto a casserole dish in oven until brown? That's how you can have gooey mac-n-cheese bites.

You don't have to treat macaroni like a pasta that belongs in a bowl (like noodle soup); it's an ingredient in baking (lasagna), stir-fry (chow mein), and even dessert (sesame and peanut cold noodles). Throw in ground meats, cilantro, hummus, salsa, peppers, what have you and make it into a chip dip.

As to how much cheese is too much? I have had so much cheese my skin is more orange-tan than Donald Trump. I am probably going to have a heart attack, but I'll be smiling.
