If a vegetarian not wanting to eat something made of dead animal bodies doesn't make sense to you, I don't know what to tell you. Perhaps you've encountered some vegetarians that aren't aware of what's in the food. Shit happens. Gelatin is not vegetarian

It really only limits some processed foods. I think people eating things out of boxes and foil pouches are missing out on real food

It's kind of terrifying that you obsess over every little molecule when it doesn't make a lick of difference. When I'm buying a loaf of bread, I don't spend half an hour looking at the ingredients and I don't think highly of the people who do because they also tend to be the same group crying out against GMOs purely on the basis of a naturalistic fallacy.

I seriously doubt they'd even know about any of it. And personally, I detest mayo, but if there was mayo in something and I didn't know about it, then it's whatever.
