Here's some that instantly come to mind:

Contra: Shattered Soldier for the PS2
Strider for PS1 and Strider HD for PS3
Hard Corps: Uprising
Metroid Samus Returns
Pretty much every Castlevania for the DS
Megaman Zero for gameboy advance and DS.
Conjunctivious in Dead Cells
It's not really a platformer....but Einhander for PS1 will always have a special place in my heart.

And I know I'm forgetting countless others.

Castlevania: OoE was surprisingly hard after breezing through the rest of the series, the bosses actually took some time to adjust to rather than just being overpowered

Yeah, you had to memorize the fuck out of their patterns, because two or three hits and you were done. Especially early in the game before you have a decent stockpile of healing items.

I died a lot in that game.

First boss fight I ever really had trouble with was Apollo in Final Fantasy Legend 2.

He sits there and taunts you for 6 turns while you wail on him, then he transforms and alternates between Flare and Masmune attacks. He has 25,000 HP and is protected with Aegis so he's immune to all magic.

I finally figured out the key is to have everyone use SpeedUp (AGL+10) every turn until Apollo transforms then use CatClaw daggers (AGLx13 damage) and you can do 10,000+ damage each turn.

Mega Man X bosses for sure. some of them more than others, and it depends if you use something they're weak against, but a lot of them can be pretty intense if you use just the mega buster.

Contra 3, especially Level 3 and Level 4

(maybe these aren't "platformer"s though?)

Yoshi's Island maybe, particularly the last boss

The last boss(es) of that Bruce Lee gba game. Was basically a boss rush mode. Might be easier to beat now though.

Quick Man from Megaman 2 is pretty crazy to fight. Like he is 3 times faster then the other robot masters and his "weakness" is to a weapon that only drains half of his health before it runs out of power.

Conjunctivious from Dead Cells isn't really hard, he's just hard to hit with everything, he moves around a lot. Turrets are pretty useless except against tentacles.

His damage is garbage, and he's very predictable, it's just a very long fight.
