I bought some veggies to roast as an expirement because I haven't done so before.

Above and beyond the competition, roasted parsnips are fucking delicious. Carrots were good too.

Roasted veggies in general are delicious.

We like to roast yellow squash and zucchini coated with olive oil. Red/yellow/orange/etc... bell peppers are also good roasted with olive oil, they become really sweet (we usually use the mini peppers)...or also add salt and they become savory.

As far as parsnips...they're really good as a creamy soup. You roast the parsnips with a piece of ginger, then mash the parsnips up and cook with a chicken broth.

There are some vegetables that are delicious but people just dont seem to eat them that often at least in my experience

Turnips come to mind. Mashed turnips with butter or turnips au gratin are so freaking good

roasted beets are 100x better than having them from a can or pickled

golden beets if you want something a bit milder in flavor and that won't stain absolutely everything

it's funny that mead mentioned turnips, because turnips are one thing I like better raw than cooked <_<. just a crispy/snappy/spicy veggie

Roasted potato is good too, of course.

Probably making roasted sweet potato tomorrow. I cut it into cubes, make a glaze (of honey, brown sugar, and cinnamon) to coat it in and...it's so good.

All root vegetables are great roasted

Try grilling them too
