Today is my companys employee appreciation lunch. Cornish game hens, mashed potatoes, salad, rolls. Or something like that. Same lunch weve had the last two years. I probably wont eat much, if any, of it.

Dinner isnt decided.

It's always nice when someone else is getting you lunch. Company lunches included. Was it kind of a holiday meal too?

Quite the assortment. What kind of dairy free yogurt do you get? Only one store near me carries anything like that and there's one coconut brand and one cashew coconut kind.

Do you regularly fast from lunch until breakfast?

It's a dutch garbage meal, just throw whatever you have into it.

Dice the potato (peel if you want), and cook it with a lid until it's done. Then throw whatever else you want on there to cook along with it because the potato takes so much longer to cook (you can even steam the vegetables while cooking because potatoes already have so much water it works). For spices I throw some salt, pepper, and crushed red pepper on it (I normally have some minced garlic in the fridge already). Also I throw some cheese on top after I cut the heat so I can melt it, you don't have to do this obviously, but it's what I do.

I just started making it at one point a few years ago, and it's been just a staple because it's easy to make. I haven't really seen anyone else make this.

Dried corn is a grain nutritionally speaking. Corn chips are fried grain flour and salt.

French fries are more of a vegetable and they're still not good for you.
