I'm inclined to say Sunday, since while I've got the Mon-Fri "work week" now, I previously mostly worked things like retail and other all week jobs, and the week was always Sun-Sat for those

It doesn't matter what the calendar says - I have never internally thought "it's Sunday, the start of the week!" before, not even once, in my entire life. A week, as a child, was five days of school followed by two break days, and the week ended when that second break day was over, and it began when I went back to school on monday. I still think of time that way.

In Chinese Monday is Xingqi Yi(1). It then runs all the way through up to xingqi liu(6) being Saturday. Sunday is xingqi tian(day). Just saying
