How could they not know that it really happened? I'm serious....how do they not realize that? I know plenty of otherwise smart people, who don't know for sure if Jesus once walked on water and was seen by mankind.

Because, when faced with two uncertain prospects, it's easier to sit on the fence when you don't necessarily care than it is to pick a side. And the existence or non-existence of higher powers doesn't necessarily factor into day-to-day life. Plus, regardless of afterlife or lack thereof, if you lead a decent life while trying not to fuck people over you'll usually get some amount of clemency even if you're a non-believer.

I'm agnostic, effectively atheist. I think the universe is just so amazing, that there must exist some reason, some logic, some explanation for it's existence. God is a pretty loose concept.
