So, what, do people just watch a quick recap and start at season 7?

What's the point, though? Even if you read a plot summary, you're still missing out on a lot of story and character development nuances...

60 hours is nothing for a tv show. Compare that to say, Supernatural, where if you wanted to catch up you'd have to watch roughly 200 hours.

Hi yeah I just watched all 6 seasons and finally got to watch a new episode. I'm probably not alone. Lots of people start watching shows after a season or two have aired.

More people could be paying for HBO at this point.

It means viewership is not decreasing year after year.

60 hours is nothing. Especially when one season is only 10 weeks long? I mean that leaves you 9 and a half months to catch up. Plenty of time.

There's plenty of time in the offseason to catch up, I used to re-watch everything from the start of House in between seasons, all the way up to the end. If you're enjoying it, you'll make time.
More viewers can easily be attributed to extra hype/PR and good advertising.
