I get per diem, but I really don't want to be eating out every night.

(I'm going to be back on weekends, so I won't go completely nuts).

Anyone have thoughts of how to do dinner while in a hotel?

Yeah, anything you can fit in a fridge is a good way to go, since you should at least have that.

You can also use your per diem on something that you know will have a lot of leftovers - I can usually make a calzone 3 lunches, for example. Calzones are dense enough and not too bready that they reheat okay in the microwave, too.

To that end: some of those Campbell's microwaveable soups could be good choices to go with some sandwiches, or to have by themselves

Crock pot, toaster oven if you have it. Are you not staying in one of those long term hotels? They usually have kitchenettes.
