Well in the movie; she didn't unlock god mode until her fight with Ares. Her bracers are still more durable than her so why take the hit? But she's never been as durable as Superman and trained not to take the risk. Superman's confidence opens himself up to a kryptonite bullet.

She probably could not at the time. Antiope certainly felt confident that she could not which is why she took the bullet for her.

She gained her powers slowly over time. She didn't have her full powers until Shortly after the plane with the gas weapon exploded.

Probably not, but you get my point. And if not, let's go with two weapons moving at the same speed: a mace and a pick. The pick has a point to concentrate all the force into a much smaller area, meaning that it would likely go through a plate of metal (like armor) while a mace with the same amount of force behind it would dent but not break or pierce the metal plate.

Wonder Woman, like most characters experienced power creep from the old days. She wasn't originally so durable that bullets wouldn't hurt her, so she blocked them. As a result, Wonder Woman blocking bullets with her brackets became fairly iconic imagery for the character. The 70's show only further ingrained this image into the public conscience.

Of course over the years she grew into a character nearly as strong as Superman. But at the same time DC didn't want to do away with the iconic Wonder Woman blocking bullets image, so they came up with the piercing weakness to have the best of both worlds.
