The stuff is not meant for mass-production, they just prepare it for you as you order (you can wait for it and take away, too, of course). But the takeout places are not really great cuisine by any stretch. And they are almost entirely run by Chinese families. I think it's one giant supply network and the only difference is how much sauce they use and probably the crab rangoons are going to be different as well.
