The only way "T-Rex" is one word is if "USA" is one word. Depends on whether or not abbreviations count, basically, but you need to be consistent.

To be fair I'm basing this 100% on the fact that Microsoft Words word counting software counts T-Rex as one word

Word will count anything not separated by a space as one word. If you forgetto spaceyour words then it will count as one, but that doesn't make it one word.

Still, I would regard T-Rex as one word even if what it represents is two.

Well in any case I can't imagine a situation where this would matter. If you're writing something with such a strict word count that one more would go over, I guarantee there's a word you can cut someplace else.
