Freeza and all his gang had came to Earth, and this was right after the Namek series and Goku was dead, so it was like, "Oh s*, Earth is screweeeeed". Then this Trunks dude shows up, goes Super Saiyan, does a bunch of badass things with his hands, and kills Freeza and his gang by himself. In the span of one episode! 11-year old KoolAidShoto thought Trunks was the coolest character of all-time. As I said, it's within a Saiyan's blood to be cocky, if they suddenly gain immense power and complete dominate an enemy, of course they're going to let it get out of hand in order to test themselves, unfortunately Gohan underestimated what he was doing at the few times he actually did let his arrogance get in the way. If he was so powerful that Buu couldn't even hurt him, it's definitely within Goku's nature to let his opponent power up to offer more of a challenge and give the opponent more of a chance.
