Came out pretty good. The bread at the bottom didn't set up as well as I'd hoped but it's not bad for my first attempt. I saved some caramel to drizzle on top but I'll wait until it cools.

This is also my first time making caramel from scratch and I'm surprised how easy it is. Saw a recipe that says I need a candy thermometer (which I don't have) so I found another recipe that was way more simple and the caramel came out great :))) can't wait for my wife and kids to try it tomorrow

You can use pretty much any thermometer that goes up to 350F as a candy thermometer. It won't be quite as convenient as being able to clip it to the side of the pot and ignore it, and if the probe is on the shorter side you need to be extremely careful not to touch the hot sugar, but it'll do the job.

That said, you really don't need a candy thermometer for caramel. Other sugar boiling, sure, but with caramel, you're going primarily by colour/smell, and the window between starting to caramelize and burning is so short that taking the time to check a thermometer once you think it might be done is going to result in it burning while you're looking away (and nobody wants to clean burnt sugar out of the bottom of a pot). If you've got an appetizing amber colour, you're golden (pun not intended), no thermometer needed. If you get more practice, you'll start to get a feel for how different colours of caramel taste and adjust how you cook it accordingly, but for now, just trust that you know what colour caramel is supposed to be and stop the cooking at that point.

as long as youre okay with creamy caramel

If you're going that route, I know of at least one condensed milk brand (Eagle Brand, dunno what that landscape is like in the States) that just straight-up sells cans of dulce de leche (which is what that kind of caramel is called), so you can just use that and save yourself a few hours.
