We used to eat a meal my parents called beat meat when I was a kid. It was some kind of beef, beat to shit and flattened out, then cooked with cream of mushroom soup as a gravy. My mom says they called it shit on a shingle growing up but that's actually something else and beat meat certainly doesn't get google results. I've always wanted to make it again myself.

I usually tenderize it. Especially chicken. Lately a lot of chicken has had that woody crunchy texture and I hate it. Only way to get it to go away is either boil or tenderize it.

No, I dry brine it with salt + spices. Makes it tender AND adds flavor.
