You want a bomb ass lasagna?
Don't use cottage cheese, for real.
Instead, mix up 32 oz ricotta cheese (Polly-o is the best if you can find it), and mix that with 2 eggs and about 1/2 cup of really great grated cheese. Mix with a big spoon until it's light and fluffy.

You want good sauce?
Chop up some onions and mince some garlic.
Add a little olive oil to bottom of a stockpot.
Put the heat to barely a simmer. Add olive oil and lightly brown the onion and garlic but watch them so they don't get burnt.

Now for sauce, you've got 2 tomato options- smooth or chunky.

For chunky sauce you want a 32 oz can of crushed tomatoes and a 32 oz can of tomato sauce. I'm talking about the big metal cans you open with a can opener, like San Marzano. Store brand will work too.

For smooth sauce, replace the crushed tomatoes for a second can of the tomato sauce.

Once the garlic and onions are very lightly browned,keep the heat to simmer and add a tablespoon of Italian seasoning, plus some extra basil and parsley to the bottom. You're warming the spices for a couple of seconds. Add some salt and pepper as well.

Pour in the cans of tomatoes, and stir. Once the tomatoes are in you can raise the heat to medium.
If you prefer the sauce a little thicker you can add 4-8 oz of tomato paste.
Toss in a 3 whole bay leaves.

Slowly cook the sauce until it bubbles but not boils, stirring as you cook the sauce.

Taste it a few times, to see if it needs anything.
Some people like to add garlic and/ or onion powder for extra flavor.
add extra salt or pepper if you need to but don't go crazy with the pepper.

When you're ready to serve the sauce, remove the bay leaves.
