I'm sort of doubtful that there's any way the union can afford to pay out increased salary for 500 years unless the vast majority of a workers' pay goes toward the union.

Edit to add it looks like it might be enough to cover the striking workers because the union that covers them goes back 150ish years and it's a small fraction of the union striking. Slightly more plausible understanding that.

They also probably have a lot of members. I just read a statistic that the percentage of unionised workers on Denmark is in the 90s.

Frieren, being an absolute badass, has much more mana than the demon, which flips the spell and allows Frieren to control the demon.
