With charcoal its almost an art of how you create your own heat gradients. Thats part of what makes it more fun. It also tastes better. You can also use wood pellets in a charcoal grill. And honestly the most simple round weber charcoal grill will get the job done. I dont know anything about smokers though. Oh I definitely will.
