Chop all that shit, sautee for ten minutes in a tablespoon of olive oil. Add a tablespoon of each: rosemary, thyme, parsley, pepper. No salt. Then fill with veggie scraps, that you collect and leave in the freezer. Top with 4 quarts of water, boil. Turn to a simmer, cover, and leave for an hour or two. I guess if you want to get fancy and add spices and saute in olive oil then it's more annoying/expensive, but that's honestly just making more work for yourself. I just use veggie scraps and chicken bones and it comes out great. Literally framing "let it sit" as some arduous step. Literally ladling the broth into jars instead of just using the funnel and strainer to pour.
