I'll never understand why people get excited for remakes, especially those that played the original.
To be fair, the FFVII remake is a pretty radical departure from the original. They're different enough games that playing one over the other is a matter of deliberate preference, rather than just being a convenience thing.
In less pronounced cases, though, it depends what extra features/changes are added. Sometimes, enough is changed or added to justify buying it again. For particularly well-loved games that get replayed often, buying a remake is also a way to express further support for the game and/or enhance those frequent replays (this is why I bought Xenoblade DE, for example, despite owning the Wii version). Less directly and outside of the scope of what this topic is asking, sometimes a remake is worth being excited about if it dredges up a game that has mostly been forgotten or is unknown to the current generation, since it brings it to the attention of modern audiences and can tell the companies behind them that there's demand for more games like that (I didn't buy the Mario RPG remake and won't be buying the Thousand Year Door one, but I'm glad to see them being remade because that creates the possibility for further Mario RPG/classic-style Paper Mario games).
Broadly, I agree with you and I don't particularly get excited for most remakes, but I can understand why some do.
