The sweetness turns me off too. It I must eat them, I use the "hood solution" of drenching it in hot sauce. Sharp cheese helps too.

French food is also kinda bad though. Like actual from France food and not Canadian French or creole/Cajun French.

the american version usually only does ground beef, but the UK versions would use beef or lamb. foods like that are invented to reduce waste.

Yeah, and the development of a lot of those foods is quite interesting - I always thought that carbonara and other Italian pastas were "traditional" dishes, but apparently there's some speculation that they may have been invented during and after WW2 in order to feed American soldiers fighting in Italy.

Meanwhile you have pizza which was originally only a neapolitan dish that was actually popularized in the US. Its popularity in the US made it a worldwide phenomenon - I actually had Korean pizza when I was in Korea, and I was rather impressed by the ingredients they used.

Correct, but don't forget the garlic! As for tomato, Italy's created the San Marzano, which many Italian Americans swear by.

I find it to be an amazing story overall. Folks always seem to focus on what "authentic" food is, but I find there to be something very poetic about how the Italian-American working-class immigrants from Southern Italy were so successful at popularizing one of their local cuisines that it actually affected how people ate back in the old country. That's pretty damn impressive, and a testament to how hard those immigrants worked and how good they were at popularizing their culture, discrimination notwithstanding.

As an aside, as a Chinese-American, I always find it to be very irritating when other Chinese-Americans write off American Chinese food as being "inauthentic".

For starters, half the time, the Chinese-Americans who write off American Chinese Food are usually American-born kids who can't speak a word of Chinese other than their own name, so it's hard to take their opinions on what is or isn't "authentic" Chinese culture seriously.

But more to the point, Americanized Chinese food was invented by Chinese immigrants as a way to make money and survive in a country which discriminated against them. It was basically a survival lifeline for Chinese immigrants who couldn't find jobs in any other field due to racial discrimination. That, to me, is the pinnacle of authenticity - adapting in order to survive.

Like hypothetically if you sent a bunch of Italians somewhere where they only had avocado oil, they'd probably try to use it as a substitute for olive oil and then use other things like anchovies or some kind of bitter root to get it tasting as close to olives as they could. It would be the same authentic recipe it just makes some unusual substitutions because the typical ingredients don't exist.

Probably the best example of this that people see today is the American Japanese imitation wasabi. Yeah sure it's not literal wasabi but it's close enough and the fish and rice are ubiquitous so you can get authentic sushi. If you've had it better in Japan it's mostly because the demand there is higher so there's a lot of competition which means a lot more experienced chefs all working harder to make their sushi the best.

Yeah, I think a few of them are. Others appear to be made either intentionally to cater to Americans' tastes, *or* coincidentally happen to cater to Americans' tastes better, probably because of the ingredients that were available to the Chinese chefs at the time.

Most American Chinese dishes are also intentionally prepared in such a fashion that they can be ready very quickly. Chinese takeout restaurants are a very well-oiled (no pun intended) operation - a lot of the sauces use a lot of the same ingredients just minus one or two things here or there, so they're really just making variations on the same dish over and over again.

And even in Japan, they'll be the first to admit that they've taken many dishes from other cultures and localized them. Curry is not native to Japan, of course, but the Japanese took an Indian dish and added some of their own flavors to it, to the point where Japanese Chicken Curry is now one of Japan's national dishes. I find that to be a cool story, but I don't think it could happen today because people would just cry cultural appropriation.
