You order a pizza with "Canadian bacon" on it and it's literally just sliced deli ham.

I think because it literally is. There's a thing called candied bacon where they boil it in sugar water until the water disappears and you're just left with the sugar fused to the bacon.

TBF though I dunno if this is an actual thing or just something Gordon Ramsay did once making fun of Americans.

No it's actual thing. I've made it before it's not great but it's not bad either. I'm not a fan of sweet bacon. You can candy lots of things though

Canadian bacon is made from cured and smoked pork loinwhich is much leaner than the pork belly used to make American bacon.

Technically, the word "bacon" comes from the German word "bacho" or "back" in English, so anything from the back of a pig seems accurate

What Americans call Canadian bacon, we call back bacon (I personally think its just ham).
