summary
with the wii u servers being shut down a group decided to clear every single stage in mario maker. after some months every stage was cleared except for trimming the herbs which is considered the hardest stage in in mario maker. people began to suspect the clear needed to upload it was cheated or hacked or what have you. turns out the creator basically created TAS tools for the wii u and was expecting people to scrutinize the level and reveal that wii u tas was possible in a grand reveal type deal. except people basically just assumed it was a really hard level and said fuck it which kinda fucked the plan. and then it faded away until it was time to clear it which lead to a kinda shitty reveal instead. and some madlads kept trying to clear it and have now succeeded. victory!

its kinda sad that the circumstances led to such an anticlimactic and awkward finale, but in retrospect it makes for an interesting story.

i also can't even begin to imagine the patience that people needed to have to do this level for hours on end. how many hours exactly did the person who beat it spend overall...?

I don't think that it's "the hardest level in the game". It just got overblown due to the circumstances about being the last level. If it got even a single clear in its first year then it would have been treated like a more "usual" hard level of its era among dozens of other comparable ones.

there are still other uncleared levels, but they either rely on tricks that were patched out of the game or were confirmed to be cheat clears

Yep, the even harder level was called Bombs5 and it was a level that gave the creator a hand injury (while trying to clear check) that wouldn't heal properly even with extended rest.

Besides that, a different creator known as "ChainChompBraden" made a level known as "Trials of Death" that he started building back in 2015 and spent almost 7 years trying to clear check. By the time he clear checked his level in 2022, Nintendo had already shut down the servers for new level uploads back in 2021. So he never got to upload Trials of Death to the game legitimately, only as a dev exit version.

Another player known as JCTheChamp had rebuilt the entire Trials of Death level in the level editor and successfully beaten it in this clear video:

If the real Trials of Death had been uploaded to the MM1 server without the dev exit, it would have been beaten before the server shutdown. The level is a potential competitor to Trimming The Herbs and Bombs5 for hardest level to be made in MM1 just because it's an insane 450 second long gauntlet level compared to TTH which is only about 13 seconds long but requires several frame perfect inputs.

See I watch this stuff and it's always just so chaotic that I have absolutely no idea what is going on or how this would differ from the intended method as all of them seem to do this sort of nonsense

It's not immediately clear unless you compare the two. If you watch the original Trials of Death clear Luster linked above, you'll see that a Yoshi is grabbed about ten seconds into the level and sacrificed maybe three seconds later. This is the Yoshi that's saved and used in the other video, and from this point on the second run is 100% different and navigates the level in an entirely unique order.
