I'm gonna keep this simple, if someone was telling your how valued you were at work, how certain people look forward to you being there/your energy, would you put any importance on the first person they mention or would you assume it's just a certain pool of people and they randomly "picked one out of the hat", so to speak?

I wouldn't think about it at all.

Depends. (Worst answer, I know).

If you have no reason to think it wasn't random, then think of it as random.

If there is some reason to think it might not be random, then make a note of it, but don't give it undue significance.

Admittedly the first person they listed is a main crush of mine, so that's why it stood out. However, that's why I'm trying to verify if my own personal biases are reading too much into it because I want it to be more for my own sake, or if you think it was random chance and since nothing is statistically impossible from a pool of unspecified amount of people they just happened to land on that one.

Looking at the options, I guess neither really work out in my favor.

Such is life.

I understand you don't actually know me because this is an Internet forum, however I already know this because I have self-awareness and it's why I have no self-esteem or confidence. Many time I've read too far into something that wasn't there. I am working against that, hence why I am trying not to be excited about this information that someone I desire may actually value me, and instead looking for the logic to justify that it's not the case.

Is there any reason why a work colleague would consciously arrange the list in their mind to give you the most vague of hints about your crush?

Seems unlikely. Are they even in a position to know? Is it the kind of thing they would do?

But that doesn't mean that there isn't anything there. Your crush has spoken positively about you. That's a good thing. Take it from there.
