For example, let's say you have a game where your character ultimately dies in the end. You could start a New Game, but the end result is basically just the same....and it turns out your character is trapped in a death loop.

OR each new game is an alternate universe

Dead Cells does something like that, but I think that's more a staple of it being a Roguelike than it doing something unique.

Bravely Default never goes 'New Game+' officially but the whole story is uh.... you should play it for yourself if you want that kind of story experience

Starfield is probably the biggest example, though you'd have to put up with it for long enough to find out and that's a tall order.

Dragons dogma (sort of)

Armored Core 6 (though I don't think NG+ is actually involved as a story element beyond "these options literally aren't here previously". It's complicated)

A number of VNs do this explicitly and I can't name them cos spoilers

Undertale and Groundhog Day in a knowledge sense rather than accumulated levels/equipment/etc.

In the formers case you also arent the only one aware of whats going on so your interactions with them on subsequent playthroughs are different.

Came to say this. Time traveling story and the earlier in the story you beat the boss thr better thr ending and one could rationalize they go back in time to end things earlier since they are strong enough now.

Bravely Default doesn't explicitly do it, although the way the game naturally plays out kind of resembles NG+.

Bravely Second does outright use NG+ as a mechanic.

Bravely Second uses NG+ to continue the plot.

In Chrono Trigger, while Lavos is technically defeatable in any encounter, there's one NG+ exclusive way to fight him. Defeating him at any point before the black omen gives you an alternate ending depending on when exactly. Most of the time you're just too weak to do it unless you're in NG+.

Undertale doesn't have a NG+ per se but there's a few story elements that carry over between resets.
