Ham is specifically cured pork. Whether that's them trying to make it sound fancy that they stuffed it full of salt or whether they actually blended cured and uncured meat to make it, I couldn't tell you, but that's probably the salient difference.

To be perfectly honest, I have never eaten spam in my life. And unlike when I said that about Kimchi (which I ended up buying and enjoying shortly after I made that statement), I never will.
