Looking for something with an encrypted(?) connection that doesn't share any data with the company that facilitates this connection.

Local network, or over the Internet?

If it's on a LAN, just set up a shared folder (right-click on the folder, select Properties, then Sharing) and then use an app like X-plore that can access network shares.

Over the Internet, you'd be better off using something like Google Drive. You can set up a folder to sync automatically with Google, and then it can be accessed from anywhere.

Gotcha. Probably LAN more than anything.

It'd be nice to have access full time, but I really just want it to access when I'm laying in bed on my phone.

seconding either a shared LAN folder and/or google drive. it's probably the simplest solution. you could also make an HFS (HTTP file server) which would require some setting up on your end
