I feel like I constantly hear good things about them, but I dont know anything about them other than they are RPGs. How do they play? Are they similar to any other games?

Ryza's games aren't that great. All of the other Atelier series are better.

I only played Ryza 1 but you essentially gather materials to craft items to use on your adventure. The crafting system can get pretty in depth and is a big part of the gameplay loop as you gather more materials and learn to craft stronger items.

The rest of the game is a pretty standard JRPG experience, I understand Ryza 1 is more action based with the combat system than older Atelier games.

Like you, I heard a lot of good things about the Ryza series.
I played about 10 hours of Ryza 3 and had enough. I thought the battle system was kind of boring and there are lots of enemies to fight. Im not enough of an RPG fan to stick with it.
The crafting system was ok, but can be confusing.
The art and story seemed good enough, but I wish it had english voices instead.

I think the Xenoblade series is much better, especially 3.

You can think of them as slice of life in video game format that heavily revolve around crafting. The crafting systems change by the game and they do have typical turn-based combat and eventually a story. For the most part though the main appeal is the cast of characters, crafting, and sick music. If you go the min max going after endgame super bosses route, they also get challenging as hell.

Pre-Ryza is better.
