Why "should" they get a roommate if they can afford the space by themselves? Most people end up with a SO and then children, which will eventually use that space. Even if they didn't, it's a free country and they can do whatever they want.

I'm starting to shop around for houses and such, and I'm not sure if things are going to work out with my current girlfriend, or if I even really want to get married ever, and I guess I'm trying to figure out how much space I would want for myself and 4 bedrooms is like this magical barrier my mind won't cross

That was my situation for a few years until I met my now wife. It was great. Rooms for guests, room for office/video games. The space was nice.

Four bedrooms is a lot for just one person. Lots of empty space unless you actually have things/a purpose to fill them up with (and not just hoarding) or intend to have several people over often enough to justify the space. Otherwise, save yourself some more money. Two bedrooms should be plenty for you and a SO and a kid or two.

You can also look for houses with non-rooms and nooks.

If there's no window, it's not a room.
