Everyone who's even remotely interested in anime needs to watch Cowboy Bebop, it still holds up as one of the best animated shows of all time.

My personal favorite though is Legend of the Galactic Heroes because it's mostly devoid of cringy anime tropes and it has the actual best anime character of all time, that being Yang Wen-li.

Cowboy bebop, Samurai Champloo Code Gease, Attack on Titan, Demon Slayer, The case Study of Vanitas, Overlord, Mushoku Tensei, Kaguya-Sama: Love is War, Classroom of the Elite, Steins Gate, Mushi-Shi, Spice and Wolf, The Ancient Magus Bride, To your Eternity, Full Metal Panic!.

It's a long list so pick and choose at your discretion. A lot of classics mixed with current stuff, along with some lesser mentioned stuff and older stuff from a bunch of different genres. It's all good and there's both dub for everything.

The Street Fighter 2 movie is free on Amazon Prime. It belongs on the list of vintage 90's anime akin to Akira, Ghost in the Shell, Ninja Scroll. Also, Nausica and Princess Mononoke.

Attack on Titan is my favorite, but the subtleties of the series are lost on a lot of people here, which is strange because some of those people clearly actively follow it.

Jo Jo's Bizarre Adventures is a not so guilty pleasure of mine.

Avatar isn't an anime technically based on how you define it but it's fucking incredible. Top 3 cartoons ever made hands down.

Personally I think for as bloated as it is, Naruto fucking owns. at least watch till the end of the Land of Waves arc, which is about 14 episodes I think.

Black Lagoon (Somewhat serious anime about a Japanese salaryman joining a group of pirates operating in Southeast Asia.)

Cowboy Bebop (Sci-fi/western)

Samurai Champloo (Anime set in Edo Period Japan about two samurai and a girl looking for the "Samurai Who Smells of Sunflowers". The guys lost a bet and have to be her bodyguards for the trip, and have plans to fight to the death afterwards.)

Outlaw Star (Sci-fi/Western)

Full Metal Alchemist: Brotherhood (Fantasy[ish] anime set in WW1 Germany esque empire. Make sure you're watching Brotherhood and not the original. Brotherhood is better.)

Darker Than Black (Sci-fi [Kinda, I guess] anime about a disaster giving people fantastical powers and them being used for espionage and assassinations)

Death Note (I know you said you've seen a few episodes, but it's really good. High school kids finds a notebook from a God of Death and uses it to kill criminals. Police catch on and start hunting him.)

If you like DBZ, I might also suggest some Shonen Anime like Bleach or Naruto. Both long running, both have lots of fighting between increasingly powerful protagonists and antagonists.

Cromartie High, it's just hilarious and the dub has its own charm.
The Original Trigun anime. it's a space western
Samurai Champloo, Both Champloo and Bebop are basically the Japanese Boondocks, they've heavily influenced parts of the Boondocks, mainly the art style and action.

Agree with Cowboy Bebop, Black Lagoon, Trigun, Cromartie High and FMA Brotherhood.
Disagree with My Hero Academia as a suggestion.

One more contemporary-ish anime I haven't seen suggested yet as of typing this you might try is Megalobox. It's not perfect but I really enjoyed it. It's about people boxing with modified arm extensions and stuff.

Another suggestion is Starblazers/Space Battleship Yamato 2199 (the newer one).

Not sure where Yamato is licensing wise but I think Crunchyroll or something has Megalobox still.

Trigun

Full Metal Alchemist /Brotherhood. It's contentious to say but I actually prefer the pacing of 2003, but Brotherhood is definitely the more complete show

Fullmetal Alchemist is probably the best starting point, and one of the truly best animes out there. Better to go with Brotherhood.

-Doesnt have endless filler arcs
-Doesnt drone on about cheesy anime cliches
-Things actually get done
-Takes itself seriously but knows when to lighten the mood
-Looks good and not like every other generic anime
-No screechy girls
-The fanbase isnt gross

The only negative about it is that the short jokes really suck and they lean on it a lot.

Gurren Lagan is amazing too, and i dont really even like anime. However, it is kind of better if you are familiar with anime tropes, cause they do play on it a lot, and then twist them around. It really is one of the best though.

This is sort of one of my favorite things about Brotherhood over 2003 - Edward actually does get progressively taller, and Winrey even points out how he's taller than her

Cowboy Bebop is super overrated and slow and just boring in general, I guess it's not super tropey so it might be good for anime newcomers in that sense but otherwise I think it's a really bad pick

If you want to go with an iconic/influential ("classic") anime, go with Ghost in the Shell SAC

If you liked DBZ, Naruto is a solid follow-up. You can look up a filler guide to see which episodes to skip if you don't want to be distracted by a bunch of content that isn't part of the main storyline (and wasn't in the original manga)

Bleach is also a pretty fun series with some DBZ similarities.

My Hero Academia is also a very solid introduction series since it has enough in common with western comic book superheroes to be pretty familiar despite being anime.

Definitely Yu Yu Hakusho if you loved DBZ. When I was younger I loved the more gritty serious tone of it compared to DBZ. Also a lot of the fighting(at first) is more grounded than DBZ.

Haven't see anyone suggest it yet but Sailor Moon is worth a watch for a few episodes at least. Its one of the most popular anime of all time alongside Dbz.

SSSS.Gridman is also pretty good, it's a sequel to an old live action series of the same name but you don't really need to watch the original to watch the anime. It just gives some nods here and there in reference.
