I've not played it, but I feel like I've read that part of the plot of that Arceus game is that towns tend to be somewhat isolated because there's giant fuck-off Pokemon all over the place.

I'm not sure how long they've existed but if we take the Anime, then we know two things
  1. Pokeballs used to be made from Apricots until technology advanced. One guy still makes them that way to get different kinds
  2. Pokeballs have advanced over the years. Pokemon 4 Ever (I think that's the one with Celebi anyway) shows a young boy using an antique form of pokeball in the past that required turning a screw.
That said, it's questionable how they've worked over time because they apparently turn the pokemon into energy. Which raises further questions that I'm too tired to ponder.

Did humans used to hunt/eat Pokemon? Did ancient humans use spears to take down Mamoswine (had to look up if there was a mammoth Pokemon equivalent)? Do guns exist in Pokemon? Are there rednecks who hunt Stantlers and take pics of them on spread out on their trucks? Oooh, have redneck Pokemon trainers if they don't already!

Yes, the Pokedex is filled with it.
Nacli produced rock salt that humans eat.
Toedscool is described as having flaps that fall from its body, which are chewy and very delicious.
Veluza discards its spare flesh to boost its agility, which regenerates, so it's not an issue for Veluza. The spare flesh is described as having a mild but delicious flavor.
Klawf's claws are used for cooking.

Crabrawler has boxing glove-like pincers that don't have too much meat inside them. However, the meat that is inside is considered delicious. Alolans are waltzing down shorelines, ripping pincers off of Crawbrawlers.
Basulin is a "common food source" and "meat of red-striped Basculin is on the fatty side".
Seadra are just kind of being killed to make different medicines.
Clauncher's pincers fall off over time and they taste great.
Crawdaunt is known to have been feasted upon in the past. Until it evolved a terrible smell.

Yes of course. Some of the dishes in the most recent Pokemon, Scarlet and Violet, literally use pokemon ingredients as part of the recipe. Like the crab pokemon as an ingredient for the paella
