If I don't break them then there's too much sauce left behind once all the spaghetti is gone. If I break them then the pot is completely empty and there's no leftover sauce/meat.

The way to put them in the pot is like pickup sticks.
Which is to say interlaced. If you do that, and move them when they getting cooking you will have no issues.
