Only the really well off slaves (as far as slaves could be considered well off) had access to things like fried chicken. And though it's got origins in slavery it's not a good example of the history of slaves.
I don't see anything wrong with teaching the history regarding certain food items, but just because those foods have a history that stems from slavery doesn't mean that they're not still not celebrated food items that are still being eaten to this day. What good does it do to talk about history while omitting how that history informs the present? Sure, fried chicken has a contentious past but it's still a widely consumed food.

Besides, I think what everyone is getting their panties twisted in a bunch about is the negative stereotypes surrounding fried chicken. What's being discussed is not fried chicken, what we're talking about is chicken AND waffles. The inclusion of the other food accompaniment makes it a different dish with a different history. Cause last I checked, slaves weren't eating waffles and didn't have syrup.

Hey man, did you know that when you add to, change, or modify a dish then you've got a different food item? Cause when you ever look up harmful stereotypes about black people you'll see plenty of offensive images involving fried chicken and watermelon, but you'll hardly see any of those images also include waffles. That's because chicken and waffles and fried chicken are two different meals. You can't exclude the waffles when talking about chicken and waffles, cause if you do then all you've got is fried chicken, and we've actually been discussing chicken and waffles this whole entire time.

Black history and culture doesn't stop at slavery. If the month has been being commemorated since the 70's then why shouldn't it ignore history that occurred before its inception? Chicken and waffles can be traced back to at least the 30's, so it seems like it's fair game for it to be included in any discussion about black history.

Chicken & waffles =/= fried chicken

If I served you up a slice of bread, a piece of toast, a piece of toast sandwiched between twice slices of bread, a piece of toast with beans on it, a piece of toast sprinkled with cinnamon and sugar, and a piece of toast covered in butter and sprinkles; you'd have several different menu items with different history's coming from different cultures and different backgrounds, even though the main component is essentially just bread. Same thing with chicken and waffles and fried chicken.

Fried chicken is a stereotype, chicken and waffles is just delicious.

For fried chicken and watermelon, they go back to slavery and post-slavery times. They were "poor" and "uncivilized" foods. They are easily accessible and finger foods ie not for a higher quality of people.

It's the same thing as they grape soda and wine stereotypes. It's all about perception and class distinction through whatever means, even with food and drinks.

Yes, friend chicken and watermelon and waffles are great. Delicious. There are even high class places that probably have dishes with them that cost a shit ton of money.

But the overall, historical connotation is rooted in that separation.

After the Civil War, the former slaves had to get a job.
Producing your own food that you could both eat and sell was the easiest solution, and both chicken and watermelon were popular choices. Watermelons even became a symbol of their freedom.
Former slave owners didnt like this, so they started to create caricatures of happy barefooted blacks eating watermelons, which basically said that they were a simple race that you could make happy with something as simple as a watermelon. They are also finger food that you get dirty eating, thus it fits the lower race.
That "the superior white race" also ate it didnt matter.
Waffles are newer, but still an old racistic stereotype. Watermalons have been brought up at the Obama election earlier in this topic, but they did also have Obama waffles.

I think that it is a good way to start black history month.
Let the students eat good food, then teach them the history about how it turned into racist food stereotypes.
That racists took a symbol for black freedom and success and turned it into a racial caricature against them.
That we have allowed them to keep doing this for over 150 years.
That it is only a racistic symbole for as long as we allow it and that it is time to take it back. To turn it into a symbole of good food that everybody enjoys, no matter what skin color you got or what you got between your legs.
If somebody post the watermelon caricature, then reply with a white guy eating watermelon, or one with people of different skin colors sharing one.
Take the power from them and they will stop using it.
