Maybe I'm gross, but I've fallen out of the habit of using dish soap unless something is really difficult to clean. It doesn't disinfect, so it's not doing anything unless I'm having trouble getting the grime off anything...which is fairly rare. Hot water is all I want 95% of the time.

I put my dishes at the bottom of the shower and let the soap falling off my body clean them.

Is somebody who worked as a combination of delivery driver/dishwasher for several years...I'd say all soap does definitely not all work the same.

Yeah really great job I know...but I know a thing about cleaning dishes and usually pizzerias buy these large gallons of cheap dish soap brands that need a lot more soap than if it were just Dawn.

Last brand my old company used before just getting us Dawn, was Raze...which is really odd because I cant find the stuff listed for sale anywhere. But this is the stuff that wouldn't get grease off anything.

Soaps are a subset of detergents, which, broadly speaking, are salts of fatty acids (or similar long, non-polar chain motifs). They function by having a polar end that dissolves readily in polar compounds like water and a non-polar end that dissolves readily in non-polar compounds (most commonly lipids, in a dishwashing context). The consequence of this structure is that when you add them to a mixture of polar and non-polar compounds (e.g. oil in water), the molecules will form tiny spheres around droplets of the non-polar compounds, with all of the non-polar tails pointing inward (or vice versa if it's a small amount of a polar compound in a non-polar solvent). This acts to emulsify the non-polar substance, allowing it to be carried away more easily by water.

The exact structure and composition of detergents varies, though, as does the list of other ingredients a product includes to help them work better. Soaps have a carboxyl group as their non-polar end (which is what qualifies them as soaps), but other detergents might have a sulfate (as is the case for SDS/SLS, which you may have heard of), nitrate, or other group instead. That means some formulations are going to work better than others for certain purposes. Dawn happens to be a good choice for removing oil from animals because it's been formulated to be relatively gentle on skin, but others may be better at actually getting dishes clean.
