Yes, and again they explain it when Ishida appears and why it's a big fucking deal he's killing Hollows.

I guess I must have completely missed that or forgotten about that. I always thought Hollows = bad evil spirits and should just be killed so they can't harm fresh spirits.

I don't really remember but do hollows need to kill and eat human souls? And is it something all hollows indulged in at some point in their live or just a few rouge ones?

Hollows of most types are monsters that only seek devouring others living or dead, every once and a while a hollow will gain intelligence and eventually it will end up in contact with a bunch of other hollows like it and devour each other in an orgy like frenzy, this will create a menos, we saw this upon the creation of a Menos Grande during Ichigo and Uryu's duel in the first arc, there are three classifications of Menos
Gillains, the big ones like that huge one from the first arc. They are low intelligence, move slowly and are driven by instinct like a basic hollow
Adjudas, these are smaller mostly animal and humanoid shaped, an Adjudas class menos is created when a Menos Grande gains a sense of self, usually noted by their mask looking different from other menos grande, this one will devour the other menos around it until the evolution is complete, these make up the bulk of the arrancar we see throughout the series and only a few Adjudas are capable of evolving into a the highest level of a hollow, Vasto Lorde.
Vasto Lorde, the highest class of hollow, extremely rare, extremely powerful most of them surpassing the strength of a run of the mill captain class soul reaper. In the series their are only 4 Vasto Lorde hollow first seen, a Vasto Lorde hollow is almost entirely humanoid in size and appearance
