wages are highly dependent on industry.

a production coordinator in the private industry is going to earn anywhere from 20-30 an hour
a production coordinator for the city/government is going to earn over 40 an hour

A competitive job market refers to labor competition, not employer competition. If 1000 people can do the same job, they'll land at much lower salaries than if just 10 people can do it, since there are more people to bid against. This is all assuming the number of positions open is constant.

Because there's a system of poverty where they know people will just TAKE bottom ass wages because they need to eat in order to live. And it's a bonus for them because then they get to sell you on doing more for the "good of the company" to raise productivity and make money hand over fist on your ass till you get burnt out and quit.
