anniversary edition is the exact same thing but with updated exe that breaks some mods, so you'd have to downgrade it

Special Edition/Anniversary Edition for sure. It runs on 64-bit architecture, instead of the 32-bit structure found in Oldrim.

As for 'breaking mods', that's a bunch of BS. Unless you plan on running a bunch of abandoned mods that weren't updated to match the version number of the Anniversary Edition you'll be fine. The Script Extender, the main thing that people reference when they claim that Anniversary Edition 'broke mods' had it's 1-2 lines of code diligently updated to match the current patch number of the game.

Edit: There was one brief conflict with the 'unofficial patch' mod that people instantly blamed on Bethesda, but it turns out the modder had blocked the entrance to the location because he saw fit to redo and alter a bunch of terrain meshes in the world. He fixed that shortly after.
